Lamb Tagine with Prunes and Dates

Lamb Tagine with Prunes & Dates Dish



Ingredients:

* 1 - 2 pounds of lamb, cubed
* Around 30 dried prunes
* 6 dates (pitted)
* one big red onion, sliced
* 6 oz roasted almonds
* one cinnamon stick
* one teaspoon Mrouzia Spice Blend
* one pinch of saffron
* one pinch of salt (or to taste)
* one pinch of pepper (or to taste)



Preparation:
Wash the prunes and put them in about a quart of water. Let them sit. Put cinnamon stick, Mrouzia Spice Blend, saffron, and lamb in your tagine. Cook on medium low flame. Mix for one minute. Add olive oil and onion. Leave for 5 minutes. Add salt and pepper. Take the prunes out of the water and put them aside. Keep the water! Pour it into the tagine with the lamb. Let the meat cook for 1 ½ hours (or however long it takes to cook) on a low flame. Add the prunes and dates in the last 15 minutes.

When I called to report my finding, I again had the extreme pleasure of speaking with Mary, who promised to ship out a brand new complete tagine...and since we recieved the second item two days later, I know she made good on her commitment. We haved used the tagine twice since Christmas and love it immensely. It is so very easy to use and makes absolutely delicious meals. But, keep in mind that if you do not order the brazier, you DO need to buy a heat diffuser for use on a gas OR electric range. As to the cookbook we ordered, we are really looking forward to trying all the tasty recipes. And, as wonderful products as the tagine and cookbook are, the customer service is just as outstanding.
