Maakoudah Potato Fritters


Maakoudah is a delicious herbal and spice infused Potato Fritter from the Mediterranean. It is served as a snack or a side dish - usually topped with Harissa Paste or inside a pita pocket with cucumbers and tomatoes.

Ingredients:
2 lbs Potatoes, precooked, peeled & cubed
3 or 4 eggs (depending on size)
1 tsp sea salt
1 tsp black pepper
1 tsp Spanish Paprika
1 TBSP cumin
2 tsp Aleppo Pepper
3 TBSP Moroccan Olive Oil
Pinch of Saffron, soaked in 3 tablespoons of warm water
Large red onion, grated
1/2 cup cilantro, finely chopped
4 oz cheddar cheese, cubed
1 tsp Orange Blossom Water
Harissa Paste, for dipping

Preparation:

Preheat oven to 300 degrees.

Cube potatoes & mash into a thick texture. Add grated onion, chopped cilantro, spices, olive oil, eggs, saffron water, orange blossom water, and cubed cheese. Mix well. If water, add a little flour so the mixture will form easily.

Sprinkle pan with olive oil and flour. Form mixture into balls. Place in pan and lightly press into patties.

Bake 15 to 20 minutes until golden brown and crispy.
