The Mediterranean Sea links many diverse countries, reaching from Spain, through France and Italy, to Greece and Turkey, around the Middle East and across the breadth of the North African Coast - including Morocco. The very names of these countries conjure up images of olive groves and lemon trees, the aroma of wild oregano and warm evenings eating outdoors, sipping drinks and nibbling on delicious mouthfuls from generous meze, tapas or antipasto platters. Mediterranean dishes can be as complex as the rich bouillabaisse of France or as simple as a vegetable couscous from Morocco.
