North African Cooking is an excellent cookbook for enlightened cooks interested in exotic delights from Morocco, Tunisia, Algeria and Egypt. It has wonderful pictures as well as easy-to-read step by step recipes.
Recipes include Chicken Tagine with Olives and Preserved Lemons, Couscous with Apricots and Almonds, and many other traditional North African soups, appetizers, salads, pastries, and other dishes. There is a nice variety of seafood, meat, poultry and vegetarian recipes.
I highly recommend this as an essential to any kitchen.
