Merguez Sausage Spice Blend
This blend includes 10 spices, herbs and peppers needed to make the authentic Moroccan Sausages -Merquez-
To prepare Merquez Sausages you’ll need:
1 and 1/2 lb. Lamb meat.
5 to 6 Tblsp of Merquez Spice Blend.
sheep casing. (optional)
Grind the meat in a meat grinder or food processor.
Mix well with remaining ingredients and stuff into sheep casing using a sausage stuffer (if you don’t wont to use sausage casings, you can just make small patties). Link the sausages by spinning every other one until the sausages fill the casings firmly. Cover it and let it set in the refrigerator for one day. Grill over moderate heat until just cooked through. Serve hot with pita bread and your favorite salad.
