Sumac is a very popular condiment in Turkey and Iran, where the ground fruits
are liberally sprinkled over rice. Mixed with freshly cut onions, it is frequently
eaten as an appetizer. Sumac mixed with strained yogurt makes a wonderful light sauce. It may also be added to marinades, salad dressings or rubbed on meats prior to grilling.
RECIPE: Sumac Garlic Mayonnaise
1 tsp Sumac
1 tsp chopped, fresh Thyme
1 garlic clove, minced
1 cup mayonnaise
Combine all ingredients in small bowl. Refrigerate for at least one hour before serving with grilled vegetables.
