is a dish traditionally cooked by Moroccans . Tangia
refers to the amphora-shaped earthenware vessel (photo above) it is cooked in. (Not to be confused with Tagine
but very simalar to if not the same as the spanish Ollas.
Traditional usage - It is filled with the ingredients then taken down to the local bath-house/sauna (hammam) where it is cooked for several hours in the furnace room ashes underneath the hammams. For use inside your oven.
