1 Large or 2 Small Sweet Potatoes
1 Green Zucchini
1 Fresh Fennel
4 - 5 Carrots
1/2 Butter Nut Squash
1 tsp of salt
1 tsp of Black Pepper
1 Quart of Broth (Veggie or Chicken) or just plain water
Peel and Slice all veggies as seen on video
In a pressure cooker place 1 Tbsp of Smen
Add 3 cups of broth (or just water)
Add all veggies (except for cilantro)
Add salt, pepper, and Ahtriya Tagine Spice (Vegetarian Spice Blend.)
Cover the cooker and let it cook on high heat until the whistle sounds.
When the whistle sounds turn the heat to Simmer and let it cook for 8 min
(follow cooking and safety instructions of your own pressure cooker)
OR - If you are not in a hurry, simply boil vegetables until soft.
After 8 minutes open the cooker when safe to do so.
Pour all cooked veggies in a large food processor
Add 1 cup of chopped cilantro and blend for few minutes.
Pour all processed veggies in a large cooking pot and place it on Med Heat.
Add 1/2 cup of olive oil, 1 large Tbsp of Cumin, Adjust salt and pepper to taste.
Cook and stir continuously for at least 4 minutes.
Serve hot with your favorite cheese.
* Can substitute Ghee or Coconut Oil for Smen
