This blend includes all natural spices, herbs and peppers needed to prepare Kim Chee

To prepare Kim Chee you'll need:

5-6 TBS of Kim Chee Pickling Spice Mix
1 lb. of Nappa Cabbage
1 large carrot
1/4 lb of white oriental radishes
2 Scallions
1/4 cup soy sauce
1 cup water
3 Tbs vinigar
1 tsp fresh ginger
3 cloves garlic
2 Tbs of Lemon Juice

Slice the cabbage lengthwise into quarters. Remove the tough core and then slice the quarters into 1 to 2 inch-long pieces.
Slice the carrot, ginger, garlic and the radishes into very thin strips.
Toss all the ingredients including the spices into a large bowl and mix with hands.
Pack vegetables into sterilized jars. Pour liquid into the jars. If more liquid is needed to cover the vegetables, add water.
Cover loosely with a lid and let sit at room temperature for 3 to 5 days to ferment.
Refrigerate the Kim Chee for 3 to 4 days. The cabbage will become translucent and will be ready to serve.

5 of 5 I Use This Constantly December 28, 2016

I make a new batch of Kim Chee as soon as I finish the last one. I am very happy with the flavor. There are many ways to prepare kim chee, but I can't imagine any of them without using this spice mix. If you are unsure on how to make kim chee, Zamouri has been kind enough to include a great recipe on the order page. I prefer my kim chee as simple as possible, so for each quart I only add freshly minced garlic, a bit of ginger, chopped green onion, and a teaspoon of sea salt. Be careful with the salt though, if you add any. This spice mix does include salt.
