This blend includes 10 spices, herbs and peppers needed to make the authentic Moroccan Sausages -Merguez-
To prepare Merguez Sausages you will need:
1 and 1/2 lb. lamb meat (ground, if possible)
5 to 6 Tbsp of Merguez Spice Blend.

Grind the meat in a meat grinder or food processor.
Mix well with remaining ingredients and stuff into sheep casing using a sausage stuffer (you do not need to stuff into sheep casings, you can just make small patties). Link the sausages by spinning every other one until the sausages fill the casings firmly. Cover it and let it sit in the refrigerator for one day. Grill over moderate heat until just cooked through. Serve hot with pita bread and your favorite salad.
