Three Little Tagines VIDEO: (Fast Food Moroccan Tagines)
1st Recipe (Chicken Tagine) Ingredients: • 2 Tbsps. Vegetable oil (*) • ½ chopped onion • Small pcs of chicken (drum sticks) • 2 Tbsps. chopped fresh cilantro • 3 carrots peeled and sliced • 2 potatoes peeled and sliced • 1 zucchini peeled and sliced • ½ tomato chopped • Salt to taste • 1 Tbsp of La Kama Tagine Spice (chicken Tagine Spice Mix)
2nd Recipe (Veggie Tagine) Ingredients: • 2 Tbsps. Vegetable oil (*) • ½ chopped onion • 2 Tbsps. Chopped fresh cilantro • 3 carrots peeled and sliced • 2 potatoes peeled and sliced • 1 zucchini peeled and sliced • ½ tomato chopped • Salt to taste • 1 Tbsp of Ahtriya Tagine Spice (Vegetarian Tagine Spice Blend)
(*) Optional: To give your Tagine a nutty flavor, mix the cooking vegetable oil with some Argan Oil (Half & Half). Side dish: Moroccan Harissa Paste Cookware: 3 Small Cooking Terracotta Clay Tagines (8” to 9” wide)
Recipe 1 & 2 (Chicken Tagine & Veggie Tagine) Instructions: Place Two Small Tagine Plates over low heat. Add Oil to both plates and allow them to get a little warm. Add onions to plates and caramelize for 3 minutes. Add salt to taste and increase the heat to Medium on the 1st plate. Place chicken on the 1st plate and sear it for 4 min on both sides then add La Kama Tagine chicken spice blend to it. Increase the heat to Medium on the second plate and start arranging veggies on both plates. As seen on the video place the carrots, potatoes, zucchini, tomatoes, and cilantro forming a pyramid shape. As you add veggies to your 2nd plate add the Ahtriya Tagine Spice veggie spice Blend to it. Cover your Tagines and let them cook for about 25 to 35 minutes or until the veggies are soft. Don’t forget to check on your tagines at least twice during the cooking period and see if broth is needed. Don’t add more than 2 Tbsps of broth as the moisture should come from the ingredients. Serve your Tagines warm with dense bread of your choice.
3rd Recipe (Sahara Egg & Tomato Tagine) Ingredients: • 2 Tbsps. Vegetable oil (*) • 2 large Tomatoes • 4 Eggs • ½ cup of Green Olives • Salt & Pepper to taste • 1 tsp. Ground Cumin • 2 Tbsps. Of fresh chopped cilantro
Recipe 3 (Sahara Eggs and Tomatoes Tagine) Instructions: Place a Small Tagine on low heat and add oil to it. When warm place the tomatoes with salt and pepper. Increase the heat to Medium and let it cook for fe w minutes until the tomatoes are soft. You can stir the tomatoes while cooking. Add the Olives and Eggs to your tagine and season with ground cumin. Do not stir your ingredients at this point. When the eggs are done, garnish the plate with some fresh cilantro and serve it warm with some bread.
