Moroccan Chicken Tagine with La Kama

A warm, savory Moroccan chicken tagine seasoned with Zamouri Spices La Kama Tagine Spice, fresh lemon, olives and vegetables. All the bright, aromatic flavor you want in a chicken tagine—without requiring preserved lemons.

Ingredients

  • 2 lbs boneless or bone-in chicken thighs
  • 2 Tbsp Zamouri Spices La Kama Tagine Spice
  • 3 Tbsp olive oil, divided
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth or water
  • 1 cup green olives
  • 1 fresh lemon
  • 2 medium carrots, cut into chunks
  • 2 medium potatoes, cut into chunks
  • Fresh cilantro or parsley for serving

Directions

Combine the chicken with La Kama Tagine Spice, 2 tablespoons olive oil, garlic and the juice of half the lemon. Toss until thoroughly coated. Cover and refrigerate for at least 30 minutes, or several hours for deeper flavor.

Drizzle the remaining tablespoon of olive oil into the bottom of your tagine or other heavy, covered cooking dish. Arrange the sliced onion across the bottom and place the seasoned chicken on top.

Arrange the carrots and potatoes around the chicken. Add the broth or water and scatter the olives throughout the tagine.

Thinly slice the remaining half lemon and arrange the slices over the chicken and vegetables.

Cover and cook over low to medium-low heat until the chicken is completely cooked and tender and the vegetables are soft, approximately 45–60 minutes. If using a traditional clay tagine, keep the heat gentle and use a heat diffuser when appropriate.

Taste the sauce before adding any additional salt, since the seasoning blend and olives already contribute salt.

Garnish with fresh cilantro or parsley and serve hot with Moroccan bread or couscous.

Cook's Note

Preserved lemon is traditional in many Moroccan chicken tagines, but it isn't essential. Fresh lemon added both to the marinade and during cooking gives this version the citrus brightness that works beautifully with La Kama Tagine Spice.
