Zamouri Spices began in 2003 with an idea: to bring the distinctive flavors of Moroccan cooking to American kitchens.
The idea came from co-founder Mary Elbertai, while co-founder Majid Elbertai brought generations of Moroccan spice knowledge and a talent for creating traditional blends. Together, they turned that idea into a specialty spice company.
In the beginning, Mary was the voice and face of Zamouri Spices, managing daily operations, helping customers, and learning the traditions behind the products they sold. From seasoning a clay tagine to understanding the ingredients and techniques of Moroccan cooking, every customer question became an opportunity to learn and share that knowledge.
Over the years, Zamouri grew into a collection of distinctive spice blends inspired by the culinary traditions of Morocco, North Africa, the Middle East, and beyond.
Today, more than two decades later, Zamouri Spices continues to focus on what made the business special from the beginning: carefully crafted blends, exceptional flavor, and helping people discover the pleasures of cooking with spices.

As the business has evolved, Mary has taken on a more hands-on role in developing, refining, and producing Zamouri's signature blends, preserving the company's culinary roots while bringing her own experience and judgment to its future.
