Mrouzia Beef Tagine with Dried Plums

1/4 Cup Olive Oil
1 - 2 lb of Beef or Lamb cut into 2 - 3" cubes
1 large onion, chopped
3 cloves garlic, chopped
1 tsp salt
1 tsp pepper
5 - 10 strand saffron
1 - 2 Tbsp Mrouzia (Sweet Ras el Hanout Spice)
1/2 lb dried plums (can also use dried apricots)
1 - 2 Tbsp cilantro, chopped
1 - 2 Tbsp honey
1/2 cup blanched, browned almonds


(Instant Pot)
Hit the Saute button on your Instant pot and let it heat up.l Add olive oil to instant pot, add onions and garlic. Saute until they are translucent. Then, add meat and brown it. Next add the spices and dried plums.

Add enough water to cover the meat. And Pressure Cook on Medium-High for 30 minutes. Let the steam release naturally. You may want to continue simmering if the sauce isn't thick enough. Add honey & cilantro and stir. Top with almonds.

(While the meal is cooking, add some oil to a frying pan. Place the almonds inside and keep stirring to prevent burning. This will only take a few minutes)

Eat with crusty bread or french baguette.
