Zahtar Roasted Chicken & Vegetables

Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 lb baby potatoes, halved
- 1 red onion, cut into wedges
- 1 red bell pepper, cut into chunks
- 3 tablespoons olive oil
- 3 tablespoons Zamouri Spices Zahtar, divided
- 2 cloves garlic, minced
- 1 lemon
- 1/2 teaspoon salt, or to taste
- Fresh parsley, for garnish
Instructions
- Preheat oven to 425°F.
- Place the chicken thighs, potatoes, onion and bell pepper on a large sheet pan.
- In a small bowl, combine the olive oil, garlic, juice from half the lemon and 2 tablespoons Zahtar.
- Drizzle the mixture over the chicken and vegetables and toss the vegetables to coat. Rub the seasoning mixture over the chicken. Sprinkle lightly with salt.
- Arrange the chicken skin-side up and roast for 40–45 minutes, or until the vegetables are tender and the chicken reaches an internal temperature of 165°F.
- Sprinkle the remaining 1 tablespoon Zahtar over the chicken and vegetables just before serving.
- Garnish with fresh parsley and serve with wedges from the remaining lemon.
Serve with warm pita, hummus, couscous or a simple cucumber and tomato salad.
