Lamb Kebabs


2 lb minced lamb.
1 large onion chopped.
2 in piece ginger chopped.
2 garlic cloves crushed.
1 green chili chopped.
2 tbsp chopped fresh cilantro
1 beaten egg
1 tbsp natural yogurt
1 tbsp olive oil

2 TBSP Sumac Spice

Put all ingredients except the yogurt and oil, into a food processor or blender and process until the mixture binds together. Spoon into a bowl and leave to marinate for 1 hour. Divide the mixture into 8 equal portions with lightly floured hands and mold into sausage shapes, thread onto skewers and chill.

Brush the kebabs lightly with the yogurt and oil, and cook under a hot grill for 8-10 mins, turning occasionally, until brown all over.
