Spices A to Z: M

Morocco's Sweet Ras el Hanout

Mrouzia is a cinnamon-forward Moroccan spice blend often described as a sweet Ras el Hanout. Warm, aromatic and complex, it is traditionally used in sweet-savory Moroccan cooking and pairs especially well with rich meats, dried fruit, nuts and honey.

Its pronounced cinnamon character gives Mrouzia a softer, sweeter aromatic profile than standard Ras el Hanout while keeping the layered warmth and complexity that define Moroccan spice blending.

How to Use Mrouzia

Use Mrouzia in beef and lamb tagines, roasted meats, couscous, vegetables, fruit and nut dishes, and other sweet-savory Moroccan recipes.

Great for: beef, lamb, tagines, couscous, roasted meats, vegetables, dried fruit, nuts and honey-based dishes.

Try it: Beef Tagine with Honey-Glazed Apples & Raisins.

Ingredients

Cinnamon, Coriander, Turmeric, Sea Salt, Ginger, Anise Seed, Cumin, Fennel, Allspice, Fenugreek, Mustard, Nutmeg, Cloves, Black Pepper, Star Anise, Garlic, Paprika, Cardamom, White Pepper.

Also known as Sweet Ras el Hanout. Alternate spellings include Mrozia, Marozia and Mrouziya.

Merguez Sausage Spice Blend

Hand-blended with cumin, coriander, paprika, fennel, garlic, sumac and other carefully selected spices and herbs, this blend makes it easy to season ground lamb for homemade merguez. No sausage casing required—shape the seasoned meat into patties or meatballs if you prefer.

Cook Tagine the Traditional Moroccan Way

Bring the experience of traditional Moroccan tagine cooking outdoors. The Zamouri Majmar is a traditional charcoal brazier designed to hold your tagine over glowing coals, creating the gentle, steady heat that's ideal for slow-simmered Moroccan dishes.

Fill the brazier with natural wood charcoal and allow the coals to burn down until glowing red. Place your tagine on top and let your meal slowly simmer, just as tagines have traditionally been cooked in Morocco.

Cooking over charcoal provides gentle, indirect heat and helps protect your tagine from the concentrated heat of a stovetop burner.

For outdoor use only.

Sizing: Fits Medium and larger tagines. Small tagines will not fit this brazier.

Important: Always use outdoors in a well-ventilated area and on a stable, heat-resistant, noncombustible surface.

Ground Mace is made from the dried bright red-orange aril of the nutmeg fruit, the lacy covering that surrounds the seed. By contrast, traditional nutmeg is made from the inner seed kernel. After the bright red aril is removed from the nutmeg seed, it is flattened and dried for 10 to 14 days before being ground. That drying process causes its color to change from red to pale yellow, orange or tan.

While both nutmeg and mace stem from the same evergreen tree (Myristica fragnans), which native to the West Indies and the Molucca Islands (or Spice Islands) of Indonesia, they each have their own distinct flavors. While nutmeg is considered warm and somewhat mild, Mace is more spicy and assertive. Although their flavors are distinguishable to the trained palate, they are often used interchangeably. Like nutmeg, Ground Mace is used most often in baking, but is also ideal for flavoring meat and fish dishes, sauces (especially light cream sauces), vegetables (notably spinach and potatoes) and in pickling and preserving. It can also be used in beverages such as tropical punches and chocolate drinks to add an exotic kick.

Mace is usually more expensive than nutmeg, since the yield of mace from a harvest of nutmeg fruits is so much lower than that of nutmeg. Only a single pound of mace is produced for every 100 pounds of nutmeg. Humorous legend has it that when the Dutch controlled the Spice Islands, a colonial administrator ordered that the colonists plant fewer nutmeg trees and more mace trees to keep up with demand.
